But, this is such a basic, easy, healthy meal that takes no time to make and full of flavour and colour.
Here's what I did to serve 2:
1. Marinate 2 fillets of white fish (any will do really, I used sea bream which is probably completely wrong but it tasted great) in olive oil, the juice of half a large lime and a dash of cumin.
2. Make the most simple salsa in the world, with vine tomatoes, lime juice, coriander and red onion. Quantity is up to the chef.
3. Make the most simple chunky guacamole in the world, with a ripe avocado, coriander, fresh chilli and lime juice.
4. Salt and pan fry the marinated fish until cooked (takes about 3 minutes), flake with a fork.
5. Get whatever you want to wrap the fillings with (we had carb-loaded with some pasta the night before, so we went the rabbit food route with some gem lettuce leaves, but tortillas are the obvious choice), and assemble at the table as you eat.
We fell in love with this, and I can see this becoming a staple once the temperature really warms up. It looks deceivingly light, but it kept us full for hours and it doesn't get much healthier than this. The only thing that would make this even better? Eating it al fresco.
